Bette Buna grow, process and export their own coffee from two sites in southern Ethiopia, and they built the company out of a request from Dawit's grandmother that the family farm stay open to its neighbours. Cherry Spark is the longest ferment in their range, six days sealed under carbon dioxide before the cherries ever reach a drying bed.

What to expect: grapefruit and tonic water at the top, dry and quinine-bright rather than juicy, with liquorice and cacao nibs underneath and a dark cherry and chocolate middle that lands somewhere close to Black Forest gateaux.

Why we love it: it is a natural that behaves nothing like a jammy natural, and the premium on the lot funds a community composting hub at Megadu that doubles as a demonstration plot for the farms around it. We have 30kg, and once it has gone there will not be another.

HOW WE MAKE IT

Cherry for this lot is picked on the highland blocks at Megadu, where Bette Buna's plots run from 1,900 up to 2,300 metres. Only fully ripe cherry goes into the Cherry Spark selection.


The whole cherry is loaded into hermetic barrels and the oxygen is displaced with carbon dioxide, then held for 144 hours. Cherry Spark is the longest of Bette Buna's CO2 ferments, running a full six days where the rest of their range sits at 96 or 120 hours. Taking the oxygen out changes which microbes can work and slows the whole process down, which is what keeps the fruit defined instead of letting it run to alcohol.


After fermentation the cherry goes out onto raised beds and dries slowly as a natural, turned by hand through the day. It is then rested, milled and sorted at Bette Buna's own dry mill and lab in Addis Ababa before export.


Fifty cents on every pound (weight) of this lot is set aside for a community composting hub at Megadu, including a vermicomposting unit that runs as a working demonstration for the farms around it.
