HOW WE MAKE IT

Colombia Ice Process begins with hand-picked Castillo cherries grown on Jairo Arcila’s Santa Mónica farm in Armenia, Quindío. After harvest, the coffee undergoes a 24-hour dry aerobic fermentation to develop its base character. It’s then sealed in Grainpro bags for 50 hours at below 22°C, allowing slow flavour development.

The key step follows: freezing the coffee for 72 hours to intensify sweetness and preserve complexity. Finally, the coffee is gently dried on raised beds at temperatures below 35°C until it reaches the ideal moisture content. This careful process creates a distinctive Colombian coffee with exceptional clarity, structure, and layered flavour.
