Grown in the Mumirwa hills above Bujumbura and fermented for two full days with the oxygen shut out, this single origin lands a long way from the country's usual clean, washed cup.

What to expect: Juicy passion fruit up top, soft caramel and cream through the middle, and a long, gently sweet finish with a faint spiced edge.

HOW WE MAKE IT

We roast Burundi Migoti Anaerobic on the lighter side of medium, just long enough to keep the passion fruit lifted without losing the caramel and cream underneath. Pushed any darker and we'd flatten the fruit that makes this lot what it is.

The aim is clean and fruit-forward, with the caramel and cream giving it body underneath. It pulls beautifully as espresso if you want something juicy, holds its shape in milk, and brews into something almost peachy on a V60 or Aeropress.
